Fried Oyster Mushrooms

Oyster Mushrooms are truly God’s gift to Vegans. Whether you’re Vegan or not, you need these mushrooms in your kitchen right now! There’s more to the mushroom world than just  Portobello and Shiitake mushrooms - that’s why I love the versatility of mushrooms.

Hate mushrooms? Well oyster mushrooms might change your mind because it sure changed mine, once I started experimenting more throughout my Vegan journey - and I’m still learning!

Oyster mushrooms are PACKED with nutrients, easy to cook and are a great meat alternative. It has a meaty texture that makes it flexible to cook and season in any way that you want to.

Where to find Oyster Mushrooms?

Oyster Mushrooms can be very difficult to find and aren’t usually found in your local supermarket. You can typically find them in Asian markets, some natural grocers, farmers markets and at times can be found in Whole Foods.

Cleaning Oyster Mushrooms

Oyster Mushrooms should be gently cleaned and if you’re rinsing them, do not rinse them for too long or they will get waterlogged - which will end up losing the flavor you’re looking for.


Ingredients

1 lb Oyster Mushrooms

Wet Batter

1/2 cup Just Egg

½ tbsp italian seasoning 

½ tbsp cajun seasoning

½ tbsp chili powder

½ tbsp smoked paprika

¼ tbsp garlic powder 

¼ tbsp onion powder

Coating

1.5 cups of Spelt Flour

1 tsp paprika

2 tbsp cajun seasoning 

Cracked black pepper

2 tbsp onion powder 

2 tbsp garlic powder

2 tbsp oregano

For Frying

Avocado Oil

Instructions

  1. First and foremost, the Oyster mushrooms need to be cleaned. It’s best to clean them using a damp cloth and if you have a lot, feel free to rinse them, but not for too long or they will become waterlogged.

  2. Once your Oyster mushrooms are clean, cut them into your desired size and set them aside.

  3. Get two separate mixing bowls and add the ingredients for your wet batter and dry ingredients. 

  4. Heat up your cooking oil and put it on low heat, as you prepare to coat each oyster mushroom.

  5. Take your oyster mushrooms one at a time and dip them in the wet batter, then the dry mixture, then the wet batter again and one more time in the dry mixture - some people coat it once, but I prefer to coat it twice, as it gives it more thickness, crunch and flavor.

  6. Place your oyster mushrooms in the frying pan and make sure not to overcrowd the pan. Note: you’ll know the oil is too hot if the oyster mushrooms become dark brown in less than a minute.

  7. Cook the oyster mushrooms in small batches, until they become golden brown. It should take about 5 minutes or so - I like to use tongs to check on them and to move them around to avoid clumping.

  8. Once you’re done frying all of the oyster mushrooms, remove them and place them on a paper towel, to absorb any extra oil. 

  9. Serve and enjoy right away!
