What is Mini Pancake Cereal?

Majority of us have seen the viral TikTok recipe. Although time consuming, pancake cereal is a fun and cute way to eat pancakes. Not only that, you’re creating your own cereal! All you’re doing is creating a bunch of mini pancakes into the size of a quarter or nickel. and piling them into a bowl, like you with any cereal.

How to Eat Mini Pancake Cereal

I’ve seen many different demonstrations on how to eat and serve pancake cereal. You can eat it with berries, agave or maple syrup, top it with vegan butter, plant-based milk or even by itself — it all depends on your preference, there’s no right or wrong way.


Ingredients

1 1/2 cup Oat flour

2 tsp baking powder

3/4 cups unsweetened oat milk

2 tsp Agave syrup

1 tbsp cinnamon

1 tsp Jamaican Vanilla Extract

Avocado oil - to lightly grease pan

Chobani Oat milk

Piping bag

Instructions

  1. Make pancake batter — in a bowl, whisk together oat flour, baking powder, unsweetened oat milk, cinnamon, agave and vanilla extract until smooth.

  2. Prep skillet — heat over medium heat and once hot, use a pastry brush to brush a thing film of avocado oil.

  3. Pour the batter into the piping bag and start piping small dots onto the pan. Cook until the edges look dry, then flip each pancake individually and do the same on the other side.

  4. Serve the pancake cereal how’d you like and enjoy!
