Lasagna Roll Ups

Lasagna Roll Ups are an easier and quicker way to eat lasagna noodles. They bake faster than regular lasagna and there is absolutely no resting time. Not only that, they are freezer-friendly and reheat very well.

Once you try this Vegan Lasagna Roll-Ups recipe, you’re going to want to keep making them again and again. It’s a comforting pasta option and will help you satisfy your craving for lasagna. I love how easy it is to serve them and aren’t as messy as sliding apart lasagna squares. The best part is that it’s 100% Vegan.

A lot of people definitely enjoy the “beefy” parts of enjoying Lasagna. Although I didn’t give the option in my personal recipe, definitely feel free to add your favorite plant-based meat alternatives to this recipe - beyond meat, crumbled mushrooms, etc.


Ingredients

8 yellow lentil & brown rice lasagna noodles

25 oz Organic Portobello Pasta Sauce

8 oz Vegan Ricotta

2 cup vegan mozzarella cheese

1 cup chopped baby spinach

½ cup diced onion

3 garlic cloves minced 

½ tbsp black pepper

¼ cup Italian seasoning

¼ cup Parsley seasoning

½ tbsp onion powder 

½ tbsp sea salt

½ tbsp paprika

1 tbsp Grapeseed Oil - for greasing

Instructions

  1. Preheat the oven to 450°F. Cook lasagna noodles in a large pot of salted water according to the package instructions. Then, drain the noodles and fill the pot with cold water to keep the noodles from sticking together.

  2. In a separate pan, sautee the baby spinach and cook the diced onions and minced garlic. 

  3. Next, in a mixing bowl, add the vegan ricotta, sauteed spinach, cooked onions and garlic, then mix together - feel free to add more seasonings to the mix for extra flavor.

  4. Arrange noodles in a baking sheet, baking pan or in my case, a cast iron skillet. Add the ricotta mix and then top it with the pasta sauce. Roll the noodles up and arrange them how’d you like.

  5. Spread more of the pasta sauce on top of the noodles,  add vegan mozzarella cheese and then top it with some parsley and italian seasoning.

  6. Cover the baking dish or cast iron with foil, to prevent it from drying.

  7. Bake for 30-35 minutes.

  8. Feel free to eat your lasagna roll ups right away!!!
