Vegan Lobster Rolls

Whaaat? Vegan Lobster Roll? What the hell is that? If you’re a Seafood lover or former Seafood lover looking for a more plant-based option, let’s get into this Vegan lobster roll recipe – vegan style!

These Vegan Lobster Rolls can be made with Hearts of Palm or Artichokes – whichever one you can find at the time, will work and turn out great. Both Artichokes and Hearts of Palm, perfectly emulate the flaky texture that Lobster has.

I really love making these and if you’re looking for something simple and quick to eat for lunchtime or a light meal, then keep on scrolling for the goods! This tastes very similar to the real thing, just healthier and CLEANER!


Ingredients

3 Potato Rolls

1 can of Artichoke Hearts

Old Bay Seasoning

3 tbsp. Vegan mayo

2 tbsp of lemon juice

Dill

Paprika

Black Pepper

Instructions

  1. In a medium mixing bowl, add your artichoke hearts, mayonnaise and your seasonings.

  2. Next, add your Old Bay seasoning last – it gives more of a “seafood” taste and then mix all the ingredients together again.

  3. Optional: Before mixing the ingredients into the Artichokes, add artichokes to the saucepan and cook for 8 minutes – this step is optional, if you prefer to not eat them raw.

  4. Lastly, add “Lobster” roll mix to potato buns and eat up! Sprinkle a little bit more  of Old Bay Seasoning for extra flavor.
