Vegan “Scallop” Scampi + White Wine Sauce

What is Heart of Palm? Hearts of Palm are cut from the core of a handful of Palm Trees native to South and Central America. After harvesting they are cut into cylinders and packed in water/brine. They can be braised, boiled or fried! Some nutritional benefits of Hearts of Palm is they are a good source of Vitamin C, Zinc, Potassium and are also low in calories.
For any of you former seafood lovers or anyone looking to lessen their mercury intake, this recipe is for you. Seasoning the hearts of palm is key and will give you a similar seafood taste, if that’s what you’re looking for.
All Vegans are vegan for different reasons and we’re all different. Some of us enjoy using plant-based ingredients in a way to mimic taste in the foods we used to love and some of us don’t have a care in the world about making our foods taste like meat or seafood. Sometimes it’s not even about looking to make something taste like something else, because at the end of the day, it really isn’t the meat/seafood that people like, it comes down to the seasonings!
Ingredients
1 can of Hearts of Palm
Chickpea Linguine
1 tbsp Grapeseed Oil
½ tbsp dill weed
Sauce Ingredients
1 cup chickpea flour
⅓ cup coconut milk
½ tbsp black pepper
¼ tbsp salt
2 tbsp Old Bay seasoning
¼ cup dry white wine
1.5 tbsp vegan butter
½ tbsp garlic powder
½ tbsp onion powder
Instructions
Boil salt water and add the linguine noodles - let it cook for 9-11 minutes.
As the noodles are cooking, slice your hearts of palm ½ inch thick. Sprinkle with black pepper, salt and Old Bay Seasoning - add to nonstick skillet and brown on each side.
Once the Hearts of Palm have been thoroughly seared and cooked on both sides, remove from heat.
In the same pan, add vegan butter, and chickpea flour - stir until it creates a paste. Next, whisk together your non-dairy milk and white wine.
Add the remainder of your sauce ingredients : nutritional yeast, coconut milk, garlic powder, black pepper, salt and old bay seasoning - Let it simmer for 3-5 minutes.
Drain the linguine noodles and add the white wine sauce to coat. Serve with the Heart of Palm “scallops” and sprinkle dill weed. You can also squeeze some lemon on top, if you wish!
