Cheese Omelette

No one can believe that this Omelette is 100% Vegan! There are quite a few ways to make an ideal Omelette using plant ingredients. One of my favorite ways to make a super cheesy and delicious Omelette, happens to be using the popular Just Egg.

So, if you’re Vegan or just looking to lessen your Egg intake, then you’ve come to the right place! I think it tastes a lot better than the “real thing” and the best part is that it’s made from ALL plant ingredients.

Just Egg is 100%  dairy-free and gluten-free. If you’re a soy-free Vegan or someone who has to avoid soy, I got you covered in another way to make a Vegan Omelette that’s 100% soy-free in another recipe.


Ingredients

1 cup of Just Egg

2 ½ cup Broccoli

1 ½ cup Sweet Peppers

½ tbsp paprika

½ tbsp black pepper

½ tbsp onion powder

¼ tbsp red pepper flakes

½ tbsp garlic powder

Vegan Mozzarella shreds (using violife)

1 slice vegan Gouda cheese 

Avocado Oil

Instructions

  1. In a mixing bowl, add your Just Egg and then add seasonings (I like to season the Just Egg mixture to give it more flavor).

  2. Chop up your Broccoli and sweet peppers, then add to the Just Egg mixture.

  3. In a pan, add Avocado oil (or your cooking oil of choice, I just prefer avocado oil or grapeseed oil) and keep it on medium heat.

  4. Add your Just Egg mixture, once the oil has heated. I keep it on medium heat, that way it doesn’t burn.

  5. Next, I add in my vegan mozzarella shreds and I break apart the sliced vegan gouda. 

  6. Flip the omelette over,  once the top looks more dry and less liquidy. If it isn’t cooked all the way through, as you might’ve thought, just carefully flip the omelette back over and cook for an additional 1-2 minutes.

  7. Cover the Omelette on low heat and let it cook for an additional 2 minutes.

  8. Carefully remove the Omelette with a spatula and transfer it to a plate. Serve with additional toppings if you wish. Enjoy!
